The Delicious Tandoori Chicken
Ingredients:
- 1200g chicken
- 1 cup yogurt
- 5 tbsp Tandoori masala paste
- 100g ghee
- 1 tsp chaat masala
- Salt to taste
- Lemon wedges and onion rings to garnish
Preparation:
- Mix yogurt, Tandoori masala, and salt and keep aside.
- Remove the skin and excess fat from the chicken using a sharp knife or a scissor.
- Half the chicken by cutting down from the centre and through the breast, again cut each piece into halves making quarters.
- Make diagonal gashes in the flesh.
- Beat the flesh at random by using the fingers or a fork.
- Spread the yogurt mixture on the chicken and inside the gashes.
- Marinate overnight, minimum 2 hours.
- Place the chicken on a wire rack and spread the excess marinade on chicken using a brush.
- Melt the ghee and pour over the chicken.
- Keep some of the marinade and ghee for basting on the other side of the chicken on half way through the cooking time.
- Cook in a pre heated oven for 15 minutes and remove the wire rack leaving the oven on.
- Baste chicken quarters with the marinade and turn to other side.
- Spread the marinade on the other side and pour the melted ghee on to the chicken.
- Cook further on the oven for 15 minutes.
- Switch off the oven and leave without opening the oven door for about 20 minutes.
- Sprinkle chaat masala over the chicken and garnish with lemon wedges and onion rings and serve hot with Naan, Paratha or any type of preferred rice.
Tandoori Chicken Recipe is the most famous dish from all the Indian food. Chicken tandoori is delicious and easy to make. Although tandoori chicken is traditionally grilled on tandoor (Indian clay oven) we can also grill in ovens.
