How delicious is a tasty curry served with fragrant rice and flat bread? Indian cuisine is popular across the world in many western societies because of the beautiful distinctive flavours and cooking methods that have developed over the centuries. Traditional Indian cooking blends multiple fresh herbs and ground spices, onion and garlic, oils and ghee or clarified butter to produce tasty bases for vegetables, lentils, fish and meat dishes. It is widely recognised as one of the healthiest and tastiest cuisines in the world.
As a civilisation thousands of years old, the development of dishes over the centuries has provided the basis for an enduring and distinctive food option. It is not hard to replicate some of the more basic dishes because of the availability of spices and herbs which are easily sourced in supermarkets and food stores or can be grown in home gardens.
Some of the more common herbs and spices include aniseed, black mustard seed, cardamom, chilli, cloves, coriander seed, cumin, fenugreek, garlic, ginger, nutmeg, saffron, star anise, tamarind and turmeric. These flavours combine superbly with fish, chicken, beef, lamb, seafood as well as tofu and vegetables.
A mortar and pestle is ideal to crush and combine spices before adding to the cooking process. This ensures the fresh release of flavour to infuse with the other ingredients. A food processor or hand-held stick blender will also do the job but care should be taken not to overdo it. A bit of rustic chunkiness is ok in many dishes. Other interesting condiments include pickles and chutneys.
Certain spices and herbs are believed to have medicinal benefits for overall health. Either way, the more natural ingredients found in Indian cooking are tasty and the best thing is that the food can taste even better the next day as long as it is stored correctly. There is an economic benefit to cooking Indian style too. Rice is a cost-effective and healthy option to accompany curries as a little can go a long way, and any vegetable will taste better when treated with pungent and aromatic spices.
